This cake is great for a birthday party, too (my birthday is this Sunday...hint, hint). Or, switch up the colors to your liking. Martha mentioned she would use different shades of pink and I instantly thought I have to do this for Breast Cancer Awareness Month next year!
Ok, ok, ok... back to St. Patrick's Day. These days there's a cupcake for everything imaginable. Here's a rainbow cupcake recipe. These would be so cute topped with gold chocolate coins, clovers, or tiny leprechauns.
